The unique terroir here, characterised by its cool climate and rich, well drained soils, creates the perfect conditions for vines to thrive. At the vineyard, the vines are flourishing bursting with life as they reach their full potential during this growing season.

The combination of maritime influences and the elevation of Red Hill creates a microclimate that’s ideal for producing exceptional wine grapes. The cool temperatures allow the vines to ripen slowly, preserving the balance of acidity and sugar in the fruit key elements for crafting wines with depth and complexity.

With access to Max’s family farm, we’re learning the art of the full circle of life growing vibrant produce like tomatoes, zucchini, radishes, and corn, all harvested at their peak and bursting with flavor.

But the magic doesn’t stop there. We’re embracing the full circle of life, raising animals with care and respect, including our Murray Grey cows, which carry the genetics to produce beautifully marbled beef perfect for our Beef Bresaola. Yesterday we celebrated, with a restaurant filled twice over and then some, the 30th birthday of Max’s Restaurant.

It was a flashback to the very first menu ever served including ‘that’ chicken roulade (we’ve heard whispers of a a petition to bring it back!) cooked by Max himself who, between courses, popped out to say a few words to the crowd of appreciative diners.

Thank you to all who managed to get a table and enjoy the festivities yesterday. To everyone who missed out, there are more celebrations coming. If you’re on Max’s mailing list, check your email for more info (if you’re not, let us know so we can add you).
