Back by heartfelt demand, for just one special day, Max is resurrecting the porchetta that inspired a lifetime of cooking a dish born from his travels through Italy. While wandering the sun drenched streets of Lucca, a walled Tuscan town steeped in history, Max found himself captivated by the aromas of slow roasted pork wafting from traditional market stalls. It was here, surrounded by Renaissance architecture and local artisans, that he tasted a porchetta so deeply rooted in place and passion, it sparked a vision to reimagine it in his own way.
